Eggless Vanilla Cake
This Eggless vanilla cake is very simple and yummy too. I got this recipe from my neighbour aunty. Only by then i have decided to bake the cake only in home and not to buy from shop. When i do the first time i have beated the cake mix so vigorously but later she told me not to do that and need to mix the flour soft. Next time, I did that as she told and it came perfect.
Ingredients:
All purpose flour (maida) - 1 1/4 cups
Sugar (powdered) - 3/4 cup
Milk Powder - 1 cup
Salt - 1 pinch
Vanilla essence - 1 tsp
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Milk at room temperature ( without adding water ) - 1 cup
Butter - 3/4 cup
Method:
Sift Maida and salt thrice and keep aside. Keep the butter in room temperature for 1 hour and add sugar, baking powder, baking soda to it. Mix it thoroughly till it becomes smooth and creamy. Add maida mixture gradually and mix well using a whisk. Add Milk powder, Vanilla essence and Milk and make the batter in thick pouring consistency ( like idly batter ). Some lumps are okay. Pour the batter in the greased pan and tap it to even it out. Bake it for 35 to 40 min at 180C or till the bottom had started to brown. Or you can insert a sharp knife in to the cake, if it comes without any dough clinging, it is ready. Transfer the pan to the cooling rack and cool it completely and then slice it. Your eggless vanilla cake is now ready to eat. Yummy...
Notes:
You can also use condensed milk instead of ordinary milk. But don't forget to decrease the amount of sugar because the condensed milk already contains sugar in it. I took 1/4 cup sugar with 1/2 cup of condensed milk, it was really good. If the batter is so thick then you can add water or milk extra.
You can also do this cake in Aluminium Pressure cooker on gas stove, if you don't have oven at home. Take an aluminium vessel and grease it using ghee. Then pour the batter that we have prepared. Keep it inside the pressure cooker and close it ( No need to pour water in the pressure cooker as you prepare rice, just keep the vessel inside and close it). Don't put whistle but make the fire to sim ( very low ). After 40 min open the lid to check whether it is done. You can do the tooth pick test. The corner of the cake will separate from the vessel and will start to brown. Switch off the cooker and close it. Let it be there for 5 min. Then take out and cool it completely before slicing.
