Carrot Halwa

It is one of the most famous Indian Recipe and the most i like it. It can be a dessert, snack for the evening or the sweet dish with the meals. It is a simple recipe that whoever with or without cooking experience can make. 


It can be served both hot or cold to the taste of individual. 


Ingredients:


Carrot ( grated ) - 1 cup
Sugar - 1/2 cup ( according to taste )
Milk - 1 1/2 cup
Ghee - 1/4 cup
Chopped Cashews , Pista, almonds or any other nuts- 5 each 
Cardomom powder - 1/2 tsp




Method:


1. Heat a heavy bottomed pan. Add a little ghee to it. Then add grated carrot. Fry and cook carrots for five min in low flame or till the colour of the carrot  had changed to pale orange. 


2. Now add milk and cook in low fire till carrot absorbs all the milk. It may take about 15 to 20 min. Do not cover the pan.


3. Add sugar and cook till sugar dissolves. When the sugar dissolves, the mixture will release water on the side. 


4. Now the mixture will thicken's.


5. Add ghee occasionally and stir it till the mixture separates from the pan. When you stir, the mixture will come along with the spoon. This is the correct time to take it off from the flame. Add cardamom powder and mix well.


6. Now fry the chopped nuts in a separate pan till golden brown and add it to the carrot mixture.


7. It can be served hot, cold or at room temperature. Enjoy...
